Healthy Breakfast Oatmeal Apple Cake

Ingredients of Apple Oatmeal Cake:
- 6 large apples
- 1 2/3 cups (210g) all-purpose flour
- 2-3 tablespoons lemon juice
- 150g butter, cold
- 1 teaspoon cinnamon
- 1¾ cups (160g) rolled oats
- 3/4 cup (150g) sugar + 1 Tbsp for topping
- Preheat oven to 180C (360F), than line a 9-inch (22-23cm) springform pan with parchment paper and grease with butter.
- Combine flour, oats, and sugar in a large mixing bowl. Grate peeled apples and combine with fresh lemon juice in a separate bowl and set aside.
- To make the first cake layer, grate 2 tablespoons (30g) cold butter into the bottom of the pan, then sprinkle 3-4 teaspoons of the oat mixture on top, pressing lightly. Spread the juice evenly over 1/3 of the crushed apples. Repeat the process two more times: oat mixture (1/3 of the leftover), apple mixture, oat mixture, apple mixture, oat mixture. On top of the cake, finely grate the remaining 120g cold butter and 1 tbsp sugar.
- Bake for 35-40 minutes, or until golden brown on top. Allow to cool for 20 minutes before removing from the pan and allowing to cool completely.
