Easy Cauliflower Fried Rice Recipe - How to Make Cauliflower Rice

  • 1 head cauliflower (~800g)
  • 2 carrots, diced
  • 1 cup (160g) peas
  • 1 onion
  • 3 garlic cloves, crushed
  • 3-5 tablespoons olive oil
  • Salt to taste
  • Black Pepper to taste

How To Make Cauliflower Fried Rice

  1. Cut the cauliflower into small florets/Chunks. Working in batches, place the cauliflower in a food processor and pulse (in 1-2 second pulses) until the cauliflower has the texture of rice or couscous – don’t over process or it will get mushy. Set aside.
  2. In a large pan heat olive oil, and chopped onion and sauté until slightly golden. Add crushed garlic and diced carrots, cook for 4-5 minutes, stirring occasionally, until carrots are tender. And peas and cook for 2-3 minutes more.
  3. Add cauliflower “rice”, season with salt and pepper. Add some olive oil (optional) and cook, stirring occasionally, for 3-5 minutes., until the cauliflower has softened. Don’t overcook.
  4. Serve warm. Enjoy!

This easy cauliflower fried rice recipe is a low carb, vegan, vegetarian and healthy dish that is super quick to make. You can easily prepare this cauliflower rice in 15 minutes or less. When I serve it for dinner I like to add some chicken breast or shrimp on top and make a complete meal out of it.

Cauliflower rice is made from riced cauliflower. You can buy it already riced or you can make it yourself. I prefer to make it myself because you can control the texture of the rice by grating it either coarse or fine. If you plan to buy riced cauliflower do not worry – many grocery stores now sell it pre-riced and ready to use. You can find it in the produce section usually next to other vegetables or you can find it in the frozen foods section as well.
